Dahi chawal (curried yoghurt rice) ingredients

  • 15 g Ghee
  • 1 med Onion, finely chopped
  • 2 t curry powder
  • 1 Clove garlic, crushed
  • 2 c Brown Rice
  • 4 c Vegetable stock
  • 1⁄2 c Dry white wine
  • Tiny pinch saffron powder
  • 200 g Plain yoghurt
  • 1 t Chopped Fresh Coriander

Cooking Dahi chawal (curried yoghurt rice)

1. Heat ghee in a pan, add onion, cook stirring, until light golden brown, add curry powder, garlic and rice.
2. Cook stirring, 2 minutes or until rice is opaque.
3. Add stock, wine, saffron to pan, being to the boil, reduce heat, cover with tight-fitting lid, simmer over very low heat for 30 minutes or until liquid is absorbed and rice tender.
4. Stiri in yoghurt and coriander before serving.
