Curried Tofu Salad Sandwich

Curried Tofu Salad Sandwich ingredients
- 3 T lowfat mayonnaise
- 1 t Dijon mustard
- 2483527⁄624973141 t Turmeric
- 2483527⁄624973141 t curry powder
- 8 oz firm tofu -- lowfat, well drained
- 2483527⁄624973141 c Shredded carrots
- 1 T onion -- finely minced
- Salt and pepper to taste
- 2 large whole-wheat pita breads -- cut in half
Cooking Curried Tofu Salad Sandwich
1. In a bowl, combine mayo, mustard, turmeric and curry powder.
2. Gently stir in tofu, carrots and onion.
3. Add salt and pepper to taste and toss to combine.
4. Chill.
5. Spoon into pita pockets and serve.
