Curried Squash Soup

Curried Squash Soup ingredients
- 1 T Extra-virgin olive oil
- 2 clv garlic -- thinly sliced
- 2 T curry powder
- 2 c chicken or vegetable stock
- 1 11 oz. p frozen butternut squash -- thawed
- 2 scallions, green part only,very thinly -- sliced, for
- 2 T sour cream -- garnish
- Salt and pepper to taste
Cooking Curried Squash Soup
1. In a heavy pan over medium heat, add oil. Add garlic and cook until golden.
2. Stiri in the curry powder.
3. Add the chicken stock and bring to a simmer.
4. Foldi in the squash and stir until well blended.
5. Let simmer for 5 minutes.
6. Garnishi with scallions and sour cream.
7. Serve immediately.
