- 2 T Vegatable oil
- 2 garlic cloves, minced
- 1 med Carrot, grated
- 2483527⁄624973141 c Raw barley
- 1 Bay leaf
- 372529⁄-2009260032 c stock
- 4 c Cooked Chick peas
- 2483527⁄624973141 lb Spinach, steamed chopped
- 1 small zucchini, diced
- 372529⁄-2009260032 t Favourite curry powder
- 2483527⁄624973141 t thyme
- 2483527⁄624973141 t Cumin
- Salt and pepper
- 2 c stock
- 2 T Lemon juice
Cooking Curried Spinach& Chick Pea Soup
1. Heat oil saute garlic for 1 minute.
2. Add carrot, barley, bay leaf 2 1/2 c stock.
3. Bring to a boil, cover simmer for 15 minutes.
4. Pureei half the chick peas add to the pot with the spinach, zucchini seasonings.
5. Simmeri covered for another 10 minutes.
6. Add the rest of the chick peas, the remaining stock lemon juice.
7. Simmer gently for another 15 minutes until the barley is tender.
