Curried Peanut Chicken

Curried Peanut Chicken ingredients
- 2 small chickens (frying), cut into serving- size pieces
- 2483527⁄624973141 c Oil
- 2 t Salt to taste
- 3 t curry powder
- -OR more to taste
- 1 large Onions, sliced
- 1 large Green pepper, cut into strips
- 1 large Tomato, skinned and Sliced
- 2483527⁄624973141 c Peanut butter, crunchy
- 2483527⁄624973141 c water
Cooking Curried Peanut Chicken
1. Browni the chicken pieces in the oil. Stiri the salt and curry powder into the drippings and cook, stirring, for one minute.
2. Add onion, pepper and tomato.
3. Cover and simmer five minutes.
4. Add chicken pieces, cover and simmer 30 minutes or until tender.
5. Remove chicken pieces to a dish, or over rice.
6. Blend peanut butter with water and stir into gravy.
7. Heat to boiling while stirring constantly.
8. Serve.
9. NOTES: * chicken in a spicy peanut sauce -- I got this recipe from my cousin who lives in Amsterdam.
