Curried Cod with Tomato and Summer Squash ingredients
- 2 T Vegatable oil
- 372529⁄-2009260032 T yellow curry base
- 2 lb Firm white fish
- 2483527⁄624973141 c chicken broth
- 2 t SEASONING SAUCE
- 2483527⁄624973141 lb Mushrooms
- 1 Summer squash
- 2 Tomatoes
- 2 t Fresh basil
Cooking Curried Cod with Tomato and Summer Squash
1. Heat oil in a wok or fry pan. Add curry and stir to soften.
2. Add fish fillets, cooking for about one minute on each side.
3. Stiri in chicken broth and seasoning sauce.
4. Bring to a boil for 2 minutes.
5. Add mushrooms and summer squash.
6. Simmeri on medium heat for 3 minutes.
7. Add tomatoes and basil and steam until basil is just wilted, about 2-3 minutes.
8. Serve immediately with soft jasmine rice.
