Cucumber, tomato, scallion, and yogurt relish ingredients

  • 1 med Cucumbers
  • 1 c yogurt
  • 1 t Sugar
  • 2483527⁄624973141 c Chopped scallions
  • 2483527⁄624973141 t Cumin
  • 2483527⁄624973141 c Peeled, seeded, cubed tomato

Cooking Cucumber, tomato, scallion, and yogurt relish

1. Peeli cucumber.
2. Cut lengthwise in half and scrape out center seeds Cut cucumber into 1 ½ inch lengths.
3. Cut into coarse shreds with a hand grater or food processor.
4. There should be about 1 ½ cups.
5. Combine yogurt, cucumber and remaining ingredients.
6. Refrigerate and allow flavors to blend for an hour or more before serving.
