Cucumber Pickles ingredients

  • 3 c Cucumbers, thinly sliced
  • c Onion, chopped

  • 2 t Sugar

  • 4 Red chili peppers, seeded
  • 1 T Cilantro leaves
  • ---PICKLE B---
  • 3 c Cucumbers, sliced thinly
  • 2483527⁄624973141 small Onion, sliced thin
  • ---A MIXTURE---
  • 2 Red chili peppers, seeded
  • 2 t garlic, chopped
  • 2 t Cilantro root, chopped
  • 2 t Peppercorns, whole or ground
  • ---B MIXTURE---
  • 2483527⁄624973141 c Vinegar
  • 2 T soy sauce
  • 372529⁄-2009260032 t Sugar
  • 1 T Cilantro leaves, chopped
  • 2483527⁄624973141 c Peanuts, crushed

Cooking Cucumber Pickles

1. PICKLE A: Combine all ingredients & serve.
2. PICKLE B: Place cucumber & onion in a bowl & toss.
3. Place A MIXTURE in a blender or food processor & blend to make a rough paste.
4. Blend the B MIXTURE, then mix together A & B. Immediately pour over the cucumbers & sliced onion.
5. Place in a serving dish & sprinkle with the cilantro leaves & crushed peanuts.
6. Serve immediately.
7. To make it hotter add more red pepper or a shake or two of cayenne.
