Cucumber dill relish

Cucumber dill relish ingredients
- 4 large Cucumbers
- 1⁄2 c Chopped onion
- 1⁄2 c Distilled white vinegar
- 4 t Minced Fresh dill
- 2 t Salt
- 1 t Fresh ground pepper
- Garnish fresh sprigs dill
Cooking Cucumber dill relish
1. Peeli, seed and coarsely grate cucumber; drain thoroughly in strainer.
2. Place in medium bowl.
3. Mixi in remaining ingredients except dill sprigs.
4. Cover and refrigerate 24 hours.
5. (can be stored in refrigerator 1 week).
6. Let stand at room temperature 10 minutes before serving.
7. Garnishi with dill.
