Crockpot sweet & sour chicken

Crockpot sweet & sour chicken ingredients
- 1 carrot, cut in pieces
- 1 green pepper, cut in pieces
- 1 Med Onion, quartered
- 4 Boneless chicken breasts, *
- 3 T Instant tapioca, (heaping)
- 8 oz Pineapple chunks, canned, **
- 2 T Candied ginger, or fresh, ***
- 1⁄3 c Dark brown sugar, packed
- 1⁄3 c Red Wine Vinegar
- 1 T soy sauce
- 1 t Instant chicken bouillon
- 1⁄2 t garlic Powder
- 1 Med Green pepper, strips
- 10 Fresh cilantro leaves, opt.
- rice, hot, cooked
Cooking Crockpot sweet & sour chicken
1. *remove all skin and any fat from chicken before cooking.
2. ** do not drain the pineapple, include the juice in the crockpot.
3. ***mince the ginger if using fresh ginger.
4. For crockpot cooking -put vegs.
5. In bottom of crockpot.
6. Sprinkle tapioca over vegetables.
7. Place chicken atop vegetables.
8. Combine all other ingreds.
9. Except rice in a small bowl.
10. Pour over chicken.
11. Cover crockpot and turn to low and cook for 8-10 hours.
12. Before serving make rice.
13. Serve over rice.
14. Leftovers can be reheated in microwave.
15. To cook in oven: put vegetables in bottom of a greased pan. Sprinkle vegs.
16. With tapioca.
17. Add chicken to pan. Combine all other ingreds.
18. Except rice in a small bowl.
19. Pour over chicken.
20. Cover pan tightly with foil.
21. Bakei in 300 deg. Oven for 2 hours.
22. Before serving make rice.
23. Serve over rice.
24. Leftovers can be reheated in microwave.
