Crispy Duck with Cherry Ginger Sauce ingredients

  • 8 oz each duck breast
  • 8 each sweet red cherries, pitted and halved
  • 2 oz Sugar
  • 2 oz water
  • 1 oz Rice vinegar
  • 1⁄2 oz ginger, samshed
  • 1 stalk scallions, very thinly sliced on a bias
  • Salt and pepper to taste

Cooking Crispy Duck with Cherry Ginger Sauce

1. Preheat the oven at 350 degrees Fahrenheit.
2. Scorei the duck breast by slicing it diagonally every 1/2 inch across the entire breast and then slicing it in the opposite direction as well forming diamonds.
3. Be sure not to slice into meat, just slightly through the skin.
4. Seasoni the duck with salt and pepper.
5. In a saute pan over high heat, when pan is hot, place the duck breast skin side down into the pan for 2 minutes or until browned, then flip it over and cook for another two minutes.
6. Remove from the heat, pour out fat released from the duck skin and place the duck in the oven to cook for 5 more minutes.
7. Pour off the excess fat and cook for another minute.
8. In a small sauce pan, heat the sugar and water together until sugar has melted.
9. Add the cherries and vinegar and cook over low heat until the sauce has turned pink.
10. Add the ginger and continue cooking until sauce is a nice bright red. When duck breast is ready, slice and fan the breast and serve it with the sauce over it and sprinkle the julienned scallions on top.
