Creamy Seafood Pasta Salad

Creamy Seafood Pasta Salad ingredients
- 12 oz shell pasta, medium
- 1 lb mixed seafood, (scallops, squid Shrimp, and/or firm white fish fillets) cut into 2 inch pieces
- 1 1⁄2 c red bell peppers, sweet diced
- 1 c green bell peppers, sweet diced
- 3⁄4 c Red onion, diced
- 3⁄4 c carrots, thinkly sliced
- 1⁄2 c Green onions; chopped
- ---DRESSING---
- 1 c yogurt, 2%
- 1⁄3 c mayonnaise, light
- 1⁄2 c fresh dill, chopped or 1 1/2 tablespoons dried dillweed
- 2 T Lemon juice
- 2 t garlic, crushed
- 1 t Dijon mustard
Cooking Creamy Seafood Pasta Salad
1. 1. Cook pasta in boiling water according to package instructions or until firm to the bite.
2. Rinse with cold water.
3. Drain and place in serving bowl.
4. 2. In medium nonstick skillet sprayed with vegetable spray, saute seafood just untill cooked, approximately 3 minutes.
5. Set aside.
6. 3. Add red and green peppers, onions, carrots and green onions to pasta.
7. Add seafood.
8. 4. Make the dressing: In small bowl combine yogurt, mayonnaise, dill, lemon juice, garlic and mustard.
9. Pour over pasta.
10. Tossi and chill.
11. TIPS: firm fish filets can be used with or instead of mxed seafood.
12. Be careful not to over cook.
13. Grilled fish instead of sauteed makes an excellent variation.
14. Make ahead: Pastai salad and dressing can be prepared early in day. Do not toss untill ready to serve.
