Creamy Crab Pasta

Creamy Crab Pasta ingredients
- 1 lb cooked rotelli or short twist pasta
- 1 c blue, dungeness, or snow crabmeat
- 1 c nonfat ricotta cheese
- 1⁄2 c Part-skim mozzarella cheese
- 1 c chicken broth
- 1⁄2 c nonfat half-and-half
- Pinch nutmeg
- 1 t Hot sauce
- 1 c arugula, washed
Cooking Creamy Crab Pasta
1. Preheat a large saucepan.
2. Add the chicken broth, half-and-half, nutmeg, and hot sauce.
3. Warm slightly.
4. Mixi the crab with the cooked pasta, ricotta cheese, and mozzarella cheese, then combine with the warmed broth and half-and-half.
5. Continue to heat until completely warm.
6. Mix in the arugula just before serving.
