Cracked Wheat and Seafood Casserole ingredients

  • 2 T butter
  • 1⁄2 c Onion
  • 1⁄4 lb fresh mushroom
  • 1 Garlic clove
  • 2 1⁄2 c chicken stock
  • 1 c BULGUR WHEAT
  • 1⁄2 oz DRIED WILD MUSHROOMS
  • 1⁄2 t thyme
  • 8 oz surimi seafood chunks or fla
  • Fresh ground black pepper
  • Plain Lowfat Yogurt
  • Lowfat sour cream

Cooking Cracked Wheat and Seafood Casserole

1. Taboulleh salad mix may be substituted for bulgur.
2. In a 2-quart bakingdish, microwave butter (or margarine) on HIGH 1 minute, or until melted.
3. Stiri in onion, fresh mushrooms and garlic.
4. Cover and microwave on HIGH 5 minutes, or until vegetables are softened.
5. Add chicken stock and microwave, uncovered, on HIGH 5 to 8 minutes, or until boiling.
6. Stir in bulgur or taboulleh mix, wild mushrooms and thyme; cover and let stand at room temperature 30 minutes.
7. Stir in surimi seafood, season to taste.
8. Cover and microwave on HIGH 2 minutes, or until hot throughout.
9. Let stand 5 minutes before serving.
10. Pass sour cream or yogurt separately, if desired, for spooning over this casserole.
