Crab-Rice Salad

- Main Ingredient: Various Seafood Cereals Rice and Grains
- Yield:
Crab-Rice Salad ingredients
- 3 c Cooked rice
- 1 lb crab meat
- 1 c Celery
- 1 c Water Chestnuts
- 1⁄3 c Scallions
- 1⁄4 c Plain Yogurt
- 1⁄4 c Sour cream
- 3 T Fresh lemon juice
- 1⁄4 t Kosher salt
- 1⁄4 t Cayenne
- 8 bibb lettuce
- 4 Tomatoes
Cooking Crab-Rice Salad
1. Combine rice, crab, celery, water chestnuts, and scallions-toss gently to mix well.
2. Combine yogurt, sour cream, lemon juice, salt, and cayenne-mix well.
3. Pour over rice mixture-toss gently to mix well.
4. Arrange lettuce leaves onto chilled salad plates.
5. Spoon rice mixture onto lettuce leaves.
6. Garnishi with tomato wedges.
7. Serve chilled.
