Crab Puff Savannah

Crab Puff Savannah ingredients
- 1 T butter
- 1 c Chopped red bell pepper
- 1⁄2 c Chopped onion
- 1⁄4 c Sliced Mushrooms
- Salt and pepper to taste
- 2 lb Fresh spinach
- 1 c Ricotta cheese
- 1 T Chopped parsley
- 1 lb crab meat -- picked over
- 5 large Eggs
- 1 c Grated Swiss cheese
- 20 sheet Filo dough
- 3⁄4 c butter, softened
Cooking Crab Puff Savannah
1. In small skillet, melt 1 Tbsps.
2. butter, add rd peppers, onions and mushrooms.
3. Sautei until tender.
4. Seasoni with salt and pepper.
5. Placei n large bowl and chill.
6. Clean spinach and remove stems.
7. blanch in boiling salted water for 2 minutes.
8. Remove, plunge into cold water.
9. Remove and squeeze out excess moisture.
10. Chopi spinach.
11. Mixi spinach with ricotta cheese and parsley, season with salt and pepper.
12. Set aside.
13. Gently mix crab meat into chilled vegetable mixture.
14. In small bowl, beat eggs and mix with Swisscheese.
15. Gently fold into crab mixture.
16. Prepare fillo pizza crust (See - Basic Instructions) in greased 9x13x2 baking pan. After the first 5 layers of fillo sheets, spread half of crab mixture over fillo.
17. Top with 5 fillo sheets and spead all of spinach mixture on top. Layer with another 5 fillo sheets, spead with remaining crab mixture and top with last 5 fillo sheets.
18. Brush with butter and score to fillo sheets in diamond shape.
19. Bakei in preheated 350 F. over 50-60 minutes or until puffed and golden brown.
