Corn Meal Muffins

Corn Meal Muffins ingredients
- 1 c unbleached all-purpose flour
- 4 t baking powder
- 2 T Granulated sugar
- 1 t Salt
- 1 c Yellow cornmeal
- 2 large eggs
- 1⁄4 c Vegatable oil
Cooking Corn Meal Muffins
1. Greasei 12 2 1/2-inch muffin cups.
2. Heat oven to 425 degrees F. Sifti flour, baking powder, sugar and salt into medium-sized bowl.
3. Add cornmeal and stir to mix well.
4. In small bowl, beat eggs with fork.
5. Add milk and oil. Add all at once to dry ingredients.
6. Stiri mixture only until dry ingredients are mositened.
7. Batteri will be lumpy.
8. Drop batter from a tablespoon into the prepared muffin cups, filling each cup 1/2 to 2/3rds full.
9. Bakei 15 to 20 minutes, or until golden brown.
10. Remove and serve hot with butter, bacon and eggs.
