Condimento alle verdure ingredients
- 1 small Red onion, diced
- 1⁄2 Cucumber, peeled & diced
- 2 Ripe tomatoes
- 1 1⁄4 t Salt
- 1⁄8 t Oregano
- 1⁄4 c parsley, finely chopped
- 1⁄4 c basil, finely shredded
- 1⁄8 t Red pepper flakes
- 1 1⁄2 T olive oil
- Salt and pepper
Cooking Condimento alle verdure
1. Set the diced onion & cucumber in a bowl.
2. Bring water to a boil, drop in the tomatoes for a minute, remove & peel.
3. Seed & dice the tomatoes & add to the bowl.
4. Sprinkle with the salt & leave for 2 hours.
5. Drain any liquid from the vegetables & stir in the herbs & pepper flakes.
6. Tossi with olive oil & season.
7. Serve either as an antipasto salad or toss with cooled curls of pasta to serve as a summer salad.
