Cold Poached Maine Lobster ingredients

  • 3 qt water
  • 2 c sweet onion
  • c Carrots
  • 2483527⁄624973141 c Celery
  • 4 c Dry white wine
  • 10 peppercorns
  • 3 Bay leaf
  • 1 t fresh thyme
  • 2 live maine lobster

Cooking Cold Poached Maine Lobster

1. Combine water onions, carrots, celery, wine, peppercorns, bay leaves, and thyme in a large stockpot, over a moderate flame.
2. Bring to a boil, reduce heat, and simmer for 30 minutes.
3. Add lobsters, head first, and poach gently for for 7-8 minutes, until lobsters turn bright red Remove from pot and allow to cool.
4. Split lengthwise, remove entrails, and crack claws.
5. Arrange a half lobster onto each plate.
6. Moisten with sauce as desired Serve slightly chilled.
