- 2483527⁄624973141 c Sugar
- 372529⁄-2009260032 t baking powder
- 2483527⁄624973141 t Salt
- 2483527⁄624973141 c Butter or margarine, at room
- -emperature
- 2483527⁄624973141 c Milk
- 2483527⁄624973141 t vanilla
- 1 Egg
- c Coconut flakes
- c Raspberry jam or preserves
- 372529⁄-2009260032 c COOL WHIP Whipped Topping
Cooking Coconut mist cake
1. Mixi flour, baking powder and salt.
2. Creami butter to soften.
3. Add flour mixture, milk and vanilla.
4. Mix until all flour is moistened; then beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
5. Add egg; beat 1 minute longer.
6. Stiri in 2/3 cup of the coconut.
7. Pour into 8 x 8 x 2" pan which has been greased and floured.
8. Cool in pan 10 minutes; remove from pan and finish on cooling rack.
9. Split cake into 2 layers.
10. Reserve 1 tablespoon jam for garnish; mix remaining jam with 2/3 cup of the coconut and spread between layers.
11. Cover top and sides of cake with whipped topping and remaining coconut.
12. Garnishi with reserved jam.
