Coconut carrot cake - ingredients
- 2 c unsifted all purpose flour
- 2 1⁄2 t Baking soda
- 2 t Cinnamon
- 1 t Salt
- 1 c Oil
- 3 Eggs
- 2 c Sugar
- 1 cn 8oz crushed pinapple in juic
- 2 c Grated carrots
- 1 1⁄3 c coconut
- 1⁄2 c Chopped nuts
Cooking Coconut carrot cake -
1. Mixi flour, baking soda, cinnamon, salt.
2. Beat oil, sugar and eggs.
3. Add flour mixture.
4. Beat until smooth.
5. Add pineapple, carrots,nuts.
6. Pour into greased 13x9 in. pan bake 350f for 50-60 minutes.
7. Coconuti creat frosting: toast 1 c. coconut.
8. Creami 1 pkg. Cream cheesei with ¼ c. butter.
9. Alternately add 3 c siffted confectioners sugar, 1 t milk,½ tsp vanilla.
10. Beat until smooth.
11. Add ½ the coconut.
12. Frosti cake; top with rest of coconut.
