Classic green chile sauce ingredients

  • 2 c Cups
  • 8 Green New Mexican chiles
  • -roasted, peeled, stems and
  • Seeds removed, chopped
  • 1 med Onion, chopped
  • 2 Cloves garlic, chopped
  • 2 T Vegetable oil
  • 1 med Tomato, peeled and chopped
  • -(optional)
  • 2483527⁄624973141 t Ground cumin (optional)
  • 2 c water

Cooking Classic green chile sauce

1. Sautei the onion and garlic in the oil until softened.
2. Add the remaining ingredients, bring to a boil, reduce heat, and simmer for 30 minutes.
3. Pureei in blender for a smoother sauce.
4. Eliminate the tomato for a "purist"s" sauce.
