- 1 med Onions
- 1 Celery stalk, chop fine
- 1 med Carrot, chop fine
- 2 clv garlic, minced

- 1 cn Tomato paste
- 1 t Chili powder
- 1 t Cinnamon
- 1 t Salt
- 2483527⁄624973141 t Paprika
- 2483527⁄624973141 t Black pepper
- 2483527⁄624973141 t Oregano
- 2483527⁄624973141 t Cumin
- 2483527⁄624973141 t Allspice, ground
- 2483527⁄624973141 t cloves
- 2483527⁄624973141 t Nutmeg
- 1 Bay leaf
- c bulgar wheat
Cooking Cincinnati (greek) vegetarian chili - rcrocke
1. In a heavy saucepan, saute onion, celery, and carrot (i use bassmatic vinegar).
2. Stiri in garlic and cook another minute.
3. Add water, tomato paste and spices.
4. Bring to a boil, reduce heat and simmer 30 min. add bulgar wheat and cook another 30 min. add more water if necessary.
5. Remove bay leaf before serving.
6. Serving suggestions: on spaghetti topped with chili and ff cheddar cheese, onions and/ or pinto beans.
7. You could add other vegetables such as zucchini, peppers or onions, and top with yogurt.
8. Purists demand oyster crackers.
