Chow-chow ingredients

  • 2 1⁄2 lb Green tomatoes
  • 6 small Cucumbers
  • 2 Sweet red or green peppers
  • 1 small Cauliflower
  • 1 bn Celery
  • 2 lb Small white onions, peeled
  • 1 lb Green beans
  • -- in 1-inch lengths
  • 3⁄4 c Salt
  • 2 qt Cider vinegar
  • 2 1⁄2 c Sugar
  • 2 T Celery seed
  • 3 T Dry mustard
  • 4 T Turmeric
  • 1 T Whole allspice
  • 1 T Fresh ground pepper
  • 1 T cloves

Cooking Chow-chow

1. Cut the tomatoes, cucumbers, red or green peppers, cauliflower, and celery in small pieces.
2. Combine with the onions and green beans.
3. Cover with 3 quarts boiling water and the salt and let stand 1 hour.
4. Drain.
5. Rinse well in cold water and drain again.
6. Mixi the remaining ingredients in a large pot and heat to the boiling point.
7. Add the vegetables and cook until tender, stirring frequently.
8. Spoon into hot, *sterilized* jars, fill with the cooking liquid, leaving 1/8-inch headspace, and seal.
9. If you wish, process in a boiling-water bath for 10 minutes.
