Chopped salad with raspberry vinaigrette ingredients
- Dressing
- 6 T Red Wine Vinegar
- 1 1⁄2 T Dijon mustard
- 1 1⁄2 t Sugar
- 3⁄4 t Salt
- 3⁄4 t Pepper
- 3⁄4 c olive oil
- Salad
- 1 large Head of red leaf lettuce
- -chopped
- 1 large Head of romain lettuce
- -chopped
- 1 bn Arugula, chopped
- 3⁄4 lb Mushrooms, chopped
- 3⁄4 lb Tomatoes, chopped
- 4 Green onions; chopped
- 1⁄4 c Minced Fresh dill
Cooking Chopped salad with raspberry vinaigrette
1. For dressing: combine vinegar, mustard, sugar, salt and pepper in a small bowl.
2. Gradually whisk in oil. (can be prepared ahead and stored in refrigerator up to 1 day. Allow dressing to come to room temperature before using).
3. For salad: place all ingredients in a large bowl and toss with dressing to taste.
