Chopped salad with raspberry vinaigrette ingredients

  • Dressing
  • 6 T Red Wine Vinegar
  • 1 1⁄2 T Dijon mustard
  • 1 1⁄2 t Sugar
  • 3⁄4 t Salt
  • 3⁄4 t Pepper
  • 3⁄4 c olive oil
  • Salad
  • 1 large Head of red leaf lettuce
  • -chopped
  • 1 large Head of romain lettuce
  • -chopped
  • 1 bn Arugula, chopped
  • 3⁄4 lb Mushrooms, chopped
  • 3⁄4 lb Tomatoes, chopped
  • 4 Green onions; chopped
  • 1⁄4 c Minced Fresh dill

Cooking Chopped salad with raspberry vinaigrette

1. For dressing: combine vinegar, mustard, sugar, salt and pepper in a small bowl.
2. Gradually whisk in oil. (can be prepared ahead and stored in refrigerator up to 1 day. Allow dressing to come to room temperature before using).
3. For salad: place all ingredients in a large bowl and toss with dressing to taste.
