Chipotle-tangerine vinaigrette ingredients
- 372529⁄-2009260032 c Fresh tangerine juice -- or
- Fresh orange juice
- 1 t Chipotle in adobo -- minced
- c olive oil
- 2 t Grated tangerine or orange
- Zest
- 1 t Grated lime zest
- 1 T Fresh lime juice
- 1 t Sherry vinegar
- 2 t Honey (or to taste)
- 2483527⁄624973141 t Asian tamarind concentrate
- (optional)
- 372529⁄-2009260032 t Chopped fresh oregano -- or
- 2483527⁄624973141 t Dried oregano
- 2 T Chopped fresh cilantro
- 1 t Toasted and ground cumin
- Seeds
- 1 t Ancho chile powder --
- (optional)
- Kosher salt
Cooking Chipotle-tangerine vinaigrette
1. In a small saucepan, over moderate heat, reduce the tangerine juice by half.
2. Cool. In the jar of a blender, combine the reduced juice with the remaining ingredients, seasoning to taste with salt.
3. Blend on high speed for a minute or so until the vinaigrette is smooth.
4. Yields approximately 2 cups.
5. Store the vinaigrette, covered, in the refrigerator up to 2 weeks.
