Chipotle-tangerine vinaigrette ingredients

  • Fresh orange juice
  • 1 t Chipotle in adobo -- minced
  • c olive oil
  • 2 t Grated tangerine or orange
  • Zest
  • 1 t Grated lime zest
  • 1 T Fresh lime juice
  • 1 t Sherry vinegar
  • 2 t Honey (or to taste)

  • (optional)

  • 2 T Chopped fresh cilantro
  • 1 t Toasted and ground cumin

Cooking Chipotle-tangerine vinaigrette

1. In a small saucepan, over moderate heat, reduce the tangerine juice by half.
2. Cool. In the jar of a blender, combine the reduced juice with the remaining ingredients, seasoning to taste with salt.
3. Blend on high speed for a minute or so until the vinaigrette is smooth.
4. Yields approximately 2 cups.
5. Store the vinaigrette, covered, in the refrigerator up to 2 weeks.
