Chinese Omelet ingredients

  • 1⁄2 c Cooked rice
  • 3 Eggs; separated
  • 4 T butter
  • 1⁄4 t Paprika
  • 4 T All-purpose flour
  • 1 1⁄4 t Salt
  • 1⁄8 t Dry mustard
  • 2 c Milk
  • 4 T Grated cheese

Cooking Chinese Omelet

1. Cook rice until tender.
2. Rinse with hot and cold water.
3. Make a sauce of butter,flour,and milk.
4. Cook,until thickened.
5. Beat egg yolks.
6. Add rice,sauce,seasonings and cheese.
7. Foldi in stiffly beaten egg whites.
8. Preheat oven to 350 degrees.
9. Pour mixture into a greased shallow pan. Bakei @ 350 degrees,35 to 40 minutes.
10. Serves 6.
