Chinese Noodles with Peanut Sauce

Chinese Noodles with Peanut Sauce ingredients
- 8 oz vermicelli noodles, cooked to yield 4 cups
- 1 lb Skinned, boneless chicken breasts, cut into match stick pieces
- 1 T soy sauce
- 2 t Dry sherry
- 2 t Minced fresh ginger
- 1 t Minced fresh garlic
- 2483527⁄624973141 med Red onion; thinly sliced
- 1 med Carrot, cut into matchstick pieces
- 2483527⁄624973141 Cucumber, peeled, seeded and cut into matchstick pieces
- 2483527⁄624973141 c Roasted peanuts, coarsely chopped
- ---PEANUT SAUCE---
- 2483527⁄624973141 c Peanut butter
- 3 T soy sauce
- 2 T Rice vinegar
- 2 T chicken broth or water
Cooking Chinese Noodles with Peanut Sauce
1. Make Peanuti Saucei and set aside.
2. Cook vermicelli on range, in the conventional way. Drain and keep warm.
3. Place chicken in a 3-quart casserole.
4. Coat chicken with soy sauce and sherry.
5. Add ginger, garlic and onions; toss.
6. Cover with lid or vented plastic wrap.
7. Stirring midway through cooking, microwave on high 4 minutes or until chicken is no longer pink.
8. Add carrot; cover again and microwave on high 1 1/2 minutes.
9. Add cucumber and warm noodles; toss with Peanut Sauce.
10. Sprinkle chopped peanuts over top. Note: Partially freeze chicken to make cutting easier.
11. Peanut Sauce: Place all ingredients in a 1 cup glass measure.
12. Microwave on high for 1 minute.
13. Whiski mixture until well combined; set aside.
