Chinese Ma Pwo Tofu ingredients

  • 4 Bean curd
  • 7 oz extra lean beef
  • 1 small leek
  • 1⁄3 c Oil for frying
  • 1 T fermented black bean
  • 2 t Hot bean paste
  • 2 t garlic
  • 2 t Fresh ginger
  • 1 t Red chili peppers
  • 1 t Chinese brown peppercorn pow
  • 1 1⁄2 T Light soy sauce
  • 1 T Rice wine
  • 1⁄2 t Salt
  • 1 1⁄2 t Sugar
  • 1 c chicken stock
  • 1 T Cornstarch

Cooking Chinese Ma Pwo Tofu

1. For seasoning sauce, mix soy, rice wine, salt, sugar, stock and cornstarch.
2. Cut the beancurd into ½ inch cubes and soak in hot water until needed.
3. Trim and shred the leeks.
4. Heat the frying oil and stir-fry the beef until lightly coloured, then add the leeks and stir-fry a further 30 seconds.
5. Add the chopped black beans, the bean paste, garlic, ginger, and chili pepper of chili sauce and stir-fry for a further 30 seconds, then add the pre-mixed seasoning ingredients and bring to a boil.
6. Simmeri for 1 minute.
7. Drain the bean curd and add to the sauce, reduce the heat and simmer until the sauce is well reduced and the flavor thoroughly permeating the bean curd.
8. Transfer to a serving dish and season with pepper.
