- 2 t Salt
- 12 t Freshly ground black pepper
- Tangy barbecue sauce
- 1 1⁄2 T Peanut oil
- 2 T Finely chopped shallots
- 2 T Finely chopped scallions
- 1 T Finely chopped garlic
- 1 T Finely chopped fresh ginger
- 2 T Fine. chopped fresh cilantro
- 3 T Finely chopped fresh chiles
- 2 T Rice wine or dry sherry
- 3 T hoisin sauce
- 2 T Sugar
- 2 t Chinese sesame oil
- 1 T Orange zest
- 2 T Chinese chili bean sauce OR
- 2 t -Satay paste
- 2 t Tomato paste
- 1 t Chinese white rice vinegar
- -=OR=- cider vinegar
- 1⁄2 c Orange juice
- 1 1⁄2 T Light soy sauce
- 1 1⁄2 T Dark soy sauce
- 1 t Salt
- 1 t Freshly ground black pepper
