Chinese almond rice salad w/soy dressing ingredients

- 1⁄3 c Whole Natural Almonds
- 1 t soy sauce
- 3 c Cooked long grain rice
- 1 1⁄2 c Cooked chicken, shredded
- 1 c celery, diagonally sliced
- 1⁄2 c Scallions, sliced
- 1 small Head Chinese Cabbage
- SOY DRESSING
- 1⁄2 c Corn oil
- 3 T soy sauce
- 2 T Vinegar
- 2 T Catsup
- 2 t Brown sugar
- 1⁄4 t garlic Powder
- 1⁄4 t Ground ginger or gingerroot
- Freshly grated
Cooking Chinese almond rice salad w/soy dressing
1. Salad: place almonds in shallow baking pan and toss with soy sauce; spread in single layer.
2. Toasti in preheat 300f oven 15 minutes, stirring frequently; set aside to cool.
3. Prepare soy dressing;set aside.
4. Combine rice, chicken, celery and scallions.
5. Reserve outer green cabbage leaves to line serving bowl; shred enough remaining cabbage to measure 2 cups and add to rice mixture.
6. Add 2/3 cup soy dressing and toasted almonds; toss.
7. Line serving bowl with reserved cabbage leaves; spoon salad into bowl.
8. Garnishi with kumquats, if desired.
9. Serve at once, passing remaining soy dressing.
10. Soy dressing: combine oil, soy sauce, vinegar catsup, brown sugar, garlic powder and ginger in a jar; cover tightly and shake well to blend.
