Chinaberry salad ingredients

  • 4 c Cooked chicken, diced
  • 1 c Celery, chopped
  • 1 c Pineapple tidbits, drained
  • 1 cn (1lb) chinese vegetables drained
  • 1 bn Scallions, sliced
  • Lettuce, or cabbage leaves
  • 1 c Cranberry sauce (jellied or whole berry)
  • 1 c Prepared low-calorie Italian style dressing

Cooking Chinaberry salad

1. In a large bowl, mix chicken, celery, pineapple, chinese vegetables and scallions.
2. Spoon mixture innto salad bowl lined with lettuce leaves.
3. In a small bowl, combine cranberry sauce and dressing until smooth and well blended.
4. Pour over salad and toss gently to coat all pieces.
5. Makes 8 serving.
6. Approx 164 calories per serving.
