Chilled Mussels Dijon ingredients

  • 300 Mussels
  • 3 c Dry white wine
  • 3 c flat-leaf parsley

  • c Unsalted butter
  • 1 T Black peppercorns
  • 372529⁄-2009260032 c olive oil
  • c Dry vermouth
  • c Fresh lemon juice
  • 2483527⁄624973141 c Shallots
  • 1 T Dried tarragon
  • 1 T Dried oregano
  • 2483527⁄624973141 t Freshly ground white pepper
  • 2483527⁄624973141 t Kosher salt
  • 6 c Mayonnaise
  • 2483527⁄624973141 c Dijon mustard
  • 1 t Cayenne

Cooking Chilled Mussels Dijon

1. Combine mussels, white wine, half the parsley, celery, half the garlic, melted butter, and crushed black peppercorns in a saucepot, over a moderate flame.
2. Cover and simmer for 5-10 minutes, until mussels open (discarding any that don't open) Remove mussels from pan. Remove and discard one shell from each mussel.
3. Remove mussels from remaining shells, and reserve shells.
4. Combine mussels with olive oil, vermouth, lemon juice, remaining garlic, remaining parsley, shallots, tarragon, oregano, white pepper, and salt-mix well.
5. Cover and chill for 1-2 hours.
6. Combine mayonnaise, dijon mustard, and cayenne-mix well.
7. Foldi into mussel mixture.
8. Arrange mussel shells onto a serving platter.
9. Place one dressed mussel onto each shell.
10. Serve slightly chilled.
