Chilled Lemon Soup

- Main Ingredient: Rice and Grains Lemon Pear

Chilled Lemon Soup ingredients
- 1 1⁄2 part Vegetable stock
- 1⁄2 part Dry Cider
- 2 oz Short-grain brown rice
- Salt and pepper
- 2 Lemons, juiced, rind grated
- 2 T chives, snipped
- 4 Thin lemon slices to garnish
Cooking Chilled Lemon Soup
1. Simmeri the stock, coder & rice in a covered pot with salt, pepper & lemon rind for 40 minutes.
2. Pureei & return to the pot. Mixi in the lemon juice & simmer gently.
3. Cool & skim any fat that might appear on the surface.
4. Chill.
5. To serve, scatter with the chives & garnish each bowl with a slice of lemon.
