Chickpeas Italienne ingredients

  • 1 1⁄2 c Dried chick peas, soaked*
  • 1 T olive oil
  • 1 med Onion, chopped
  • 2 garlic cloves, chopped
  • 14 oz Canned tomatoes, chopped**
  • 1 small Can tomato paste
  • 1 t basil
  • 1 t Oregano
  • 1 dsp Cinnamon
  • 2 T parsley
  • Salt and pepper to taste

Cooking Chickpeas Italienne

1. Rinse chickpeas, place in fresh water & cook for 50 minutes or till tender.
2. Heat oil in large pot & saute onions & garlic for a few minutes.
3. Add the tomatoes & tomato paste.
4. Bring to a boil, lower heat & add the rest of the ingredients.
5. Simmeri for about 10 minutes or until the sauce has thickened.
6. Serve with mashed potatoes & green vegetables or pasta or rice.
7. * Or substitute one large can of chickpeas, rinse well before using.
8. ** Or use one pound of fresh tomatoes, diced.
