Chicken tamale pie ingredients

  • 372529⁄-2009260032 oz corn muffin mix
  • 1 c Cheddar or Monterey Jack
  • -shredded
  • 372529⁄-2009260032 c chicken or turkey, cooked
  • -shredded
  • 372529⁄164516864 oz Cream of chicken soup
  • 4 oz Chiles, green, chopped
  • 1 c Corn, whole kernel
  • 2483527⁄624973141 c Scallions, chopped
  • 1 garlic cloves, minced
  • 1 t Chili powder

Cooking Chicken tamale pie

1. Prepare muffin mix as directed on package, adding ½ cup of the cheese with the mix. Set aside.
2. (do not bake).
3. Cook and stir chicken, soup, chilies, scallions, garlic and chili powder in a large saucepan until heated through.
4. Spoon muffin mixture into a greased 2 quart casserole.
5. Spoon hot soup mixture over muffin mixture to within ½" of the edge.
6. Bakei at 350 °F for 25 minutes or until cornbread is golden.
7. Top with cheese.
