Chicken Salad Delight ingredients
- 3 c water
- 2483527⁄624973141 c Medium Pearled Barley*
- -- Quaker Scotch brand
- 1 t Instant chicken bouillon
- -- granules
- 2483527⁄624973141 t Salt (optional)
- 2 c Chopped cooked chicken
- 2 c Halved seedless grapes red or green
- 2483527⁄624973141 c Chopped celery
- 2483527⁄624973141 c Chopped walnuts
- 2483527⁄624973141 c Mayonnaise or salad dressing
- 1 T Milk or water
- 1 t curry powder (optional)
Cooking Chicken Salad Delight
1. Bring water to a boil; stir in barley, bouillon granules, and 1/4 teaspoon salt.
2. Reducei heat.
3. Cover; simmer 50 to 60 minutes or until tender, stirring occasionally.
4. Drain; cool.
5. Combine cooked barley, chicken, grapes, celery and walnuts.
6. Combine remaining 1/4 teaspoon salt with remaining ingredients; mix well.
7. Pour over barley mixture, tossing lightly.
8. Cover; chill.
9. Serve in cantaloupe halves or on lettuce leaves, if desired.
10. Seven 1 Cup Servings *NOTE: To substitute 2/3 cup Quaker Scotchi brand Quick Pearled Barleyi, decrease water to 2 cups and cooking time to 10 to 12 minutes.
11. Proceed as recipe directs.
