Chicken breasts in lime and ginger ingredients

  • 1 T Lime Juice, fresh
  • 1 T Grated Lime Peel
  • 1 t REDUCED SODIUM SOY SAUCE *
  • 1⁄8 t Red pepper sauce
  • 1 lb BONELESS CHICKEN BREASTS (4)
  • * 2 tb WHOLE WHEAT FLOUR
  • 2 T SAFFFLOWER OIL
  • 2 T GINGER SAUCE - RECIPE BELOW
  • 1⁄4 c chicken broth
  • 1 T Chopped green onions

Cooking Chicken breasts in lime and ginger

1. marinade (* ingredients for lime marinade for chicken): combine all ingredients in a small bowl.
2. Coat chicken pieces with marinade and let stand for 1 hour - covered and refrigerated.
3. Lightly sprinkle chicken with flour.
4. Heat oil in skillet over medium high heat.
5. Add chicken and cook until lightly browned, about 4 to 5 minutes.
6. Transfer chicken to a warmed platter.
7. Set aside and keep warm.
8. Add ginger sauce and chicken broth to skillet and simmer covered over low heat for about 3 minutes.
9. Slice chicken breasts diagonally
