Chicken and Rice Casserole with Summer Vegetables ingredients

  • 1 T Vegatable oil
  • 1 Onions
  • 2 garlic
  • 1 Red sweet pepper
  • 1 Zucchini
  • 1 lb chicken breasts
  • 2 Tomatoes
  • 1 c Brown Rice
  • 3 c chicken broth
  • 1 t Salt
  • 1⁄2 t Ground pepper
  • 3 T parsley

Cooking Chicken and Rice Casserole with Summer Vegetables

1. Coat the bottom of a large heavy pan with vegetable oil. Add the onion, garlic, red pepper and zucchini to the pan. Cook over low heat, stirring occasionally, until the vegetables are very soft, about 5 minutes.
2. Add the chicken and turn the heat up to medium-high.
3. Stiri until the chicken is cooked lightly on all sides.
4. Add the tomatoes, chicken broth and salt.
5. Bring the broth to a boil and then adjust the heat to maintain a slow simmer.
6. Let the casserole simmer until the rice is tender, about 45 minutes.
7. Stir in the pepper and parsley and serve.
