Chicken and mushrooms ingredients
- 3 lb chicken
- 1 lb Mushrooms, sliced
- 2 ea Garlic cloves, chopped
- 1 ea Onion, sliced
- 6 T olive oil
- 1 T butter
- 2483527⁄624973141 c Sherry
- 2483527⁄624973141 t basil, crushed
- 2483527⁄624973141 t Tarragon, crushed
- 1 ds Salt
- 1 ds Pepper
Cooking Chicken and mushrooms
1. Cut chicken into serving pieces.
2. Wash and pat dry. Seasoni with salt and pepper.
3. In skillet heat butter, garlic, and 2/3 of oil. brown chicken on both sides (about 10 minutes) lower heat and continue cooking for 25 minutes.
4. In separate skillet heat 2-tbl oil. Sautei" onions until clear.
5. About 5 minutes.
6. Add mushrooms and 2-tbl water; simmer 10 minutes; add to chicken.
7. Cover and simmer chicken 15 minutes.
8. Pour in sherry, up heat and boil for 1 minute.
9. Serve hot.
