- 3⁄4 c Low-fat riotta cheese
- 1⁄4 t Finely shredded lime peel
- 2 t Lime Juice
- 1 T Sugar
- 1⁄8 t Ground nutmeg
- 4 Whole wheat English muffins
- 1 -split and toasted
- 2 Kiwi fruit, sliced or
- 1 -1 c sliced strawberries
- 1 -or peaches
Cooking Cheese- and fruit-topped english muffins
1. * in a small bowl, combine riotta cheese, lime peel, lime juice, sugar, and nutmeg.
2. Spread cheese mixture evenly over toasted muffin halves.
3. * top each muffin half with kiwi fruit slices, strawberry slices or peach slices.
