Celery relish

Celery relish ingredients
- 4 qt Green tomatoes
- 1 small Head cabbage
- 6 Red sweet peppers
- 3 c Sugar
- 2 qt Vinegar
- 1 qt Onions
- 1 Head cauliflower
- 6 T Dry mustard
- 1 t Turmeric
- Salt
Cooking Celery relish
1. Cut tomatoes, onions, cabbage, cauliflower, and peppers into small pieces.
2. Allow to stand in a brine, made by using ΒΌ cup salt to each quart water, overnight.
3. Heat to boiling.
4. Boil 15 minutes.
5. Drain 1 hour.
6. Combine mustard, sugar, and turmeric.
7. Add to vinegar, which has been heated to boiling.
8. Simmeri, stirring constantly, until slightly thickened.
9. Pour over vegetables.
10. Stiri until thoroughly blended.
11. Heat to boiling.
