Celery and Apricot Soup ingredients

  • 1 lb Celery
  • 4 oz Onions
  • 4 oz Dried Apricots

  • pepper, to taste

Cooking Celery and Apricot Soup

1. Trim the celry, wash & thinly slice.
2. Peeli & finely chop the onion.
3. Finely chop the apricots.
4. Heat oil. Add celery & onion, cover & saute, without browning, for 10 minutes.
5. Shake the pan occasionally to prevent sticking.
6. Add apricots, stock & seasonings.
7. Bring to a boil, cover & simmer for 45 minutes.
8. Allow to cool slightly before blending in a blender.
9. Return to a pan & reheat.
10. Serve hot.
