Cauliflower and green pea salad ingredients

  • 1 med Cauliflower, cut in florets
  • 2 c Small peas
  • Fresh or defrosted
  • 2483527⁄624973141 c chicken broth
  • 2 Celery; sticks
  • - finely chopped
  • 3 Scallions, finely chopped
  • 2 T parsley, chopped
  • c Red bell pepper, chopped
  • 1 T Balsamic vinegar
  • 1 T Dijon mustard
  • 3 T Sour cream ("lite")
  • t Salt
  • t white pepper
  • 1 c Ham (opt'l.)
  • Cooked, chopped
  • Chives, chopped (garnish)

Cooking Cauliflower and green pea salad

1. Steami cauliflower and peas until barely tender.
2. Drain well; put into a bowl.
3. While still warm, pour the chicken broth over the vegetables.
4. Set aside to cool.
5. Combine celery, scallions, parsley, red bell pepper, vinegar and mustard.
6. Mixi in sour cream and add salt and pepper.
7. Tossi gently with cauliflower and peas, adding ham if used.
8. Sprinkle with chives.
