Cauliflower and ginger soup ingredients

  • 372529⁄-2009260032 lb Cauliflower
  • 6 oz Onion, chopped
  • 2483527⁄624973141 oz Ginger, chopped
  • 2 t Vegatable oil
  • 372529⁄-2009260032 pt Vegetable stock
  • 372529⁄-2009260032 t Salt
  • pepper, to taste

Cooking Cauliflower and ginger soup

1. Slice off cauliflower base & discard the discoloured outer leaves.
2. Thinly slice the the remaining leaves & break the cauliflower into florets.
3. Wash & drain well.
4. Heat the oil in a soup pot & saute the cauliflower & onion over medium heat, covered, for 10 minutes.
5. Do not allow to brown.
6. Add ginger, stock, salt & pepper.
7. Bring to a boil, cover & simmer for 30 minutes.
8. Cool slightly.
9. Blend cooled soup in a blender or food processor until smooth.
10. Return to pot & heat until warmed through.
11. Serve immediately.
