- 2 T Margarine, low-fat
- 1⁄4 c Green pepper, chopped
- 4 T Chopped onion
- 1⁄4 c Toasted almonds, chopped (op
- 1⁄2 c Fresh bread crumbs
- 1⁄4 t Oregano
- 4 T Fresh lime juice
- 1 T Chopped coriander, (or parsl
- 1⁄2 t Salt
- 4 Catfish fillets
- 2 c water
- 2 Cloves garlic, crushed
- 1 Bay leaf
- 1 t Red pepper flakes
- Lime peel
Cooking Catfish caribbean
1. Melt margarine in skillet.
2. Add green pepper and 2 tablespoons onion.
3. Sautei until onion is transparent.
4. Add almonds, bread crumbs, oregano, one tablespoon lime juice, coriander and salt; mix well.
5. Spoon filling down center of each catfish fillet.
6. Roll up and secure with toothpicks.
7. In shallow baking pan, combine remaining 2 tablespoons onion, water, garlic, bay leaf, red pepper and remaining 3 tablespoons lime juice.
8. Place catfish in pan. Bakei 400°F.
9. oven for 30-35 minutes, basting occasionally until catfish flakes easily.
10. Remove catfish to serving platter.
11. Garnishi with strips of lime peel.
