Cashew chicken and broccoli ingredients
- 1⁄2 c Raw cashews
- 2 t Vegatable oil
- 1 small Onion, chopped
- 2 garlic cloves, minced
- 4 chicken breast halves
- - boneless, skinless, cubed
- 1 c Broccoli Flowerets
- 1 c chicken broth
- 2 T soy sauce
- 2 t Cornstarch
- 1⁄4 t Salt
- 1⁄4 t Black pepper
Cooking Cashew chicken and broccoli
1. Lightly brown nuts in vegetable oil in large non-stick skillet over medium heat, about 3 minutes.
2. Remove with slotted spoon.
3. Sautei onion and garlic in skillet for 2 minutes.
4. Add chicken; saute until golden, about 8 minutes.
5. Add broccoli, ¾ cup broth and soy. Simmeri, covered, for 5 minutes.
6. Dissolve cornstarch in remaining broth; stir into skillet.
7. Simmer, stirring, over medium heat until thickened.
8. Boil 1 minute.
9. Return cashews to skillet with salt & pepper.
