Cashew brittle ingredients

  • 3 c Sugar
  • 1 c Light corn syrup
  • 1⁄2 c water
  • 2 c Cashew halves
  • 1 1⁄2 T butter
  • 1 1⁄2 t vanilla

Cooking Cashew brittle

1. Place sugar, water and corn syrup in a sauce pan. Stiri over medium high heat to dissolve sugar.
2. Continue cooking, without stirring, until mixture reaches 280 degrees on a candy thermometer.
3. Add cashews.
4. Continue cooking until mixture reaches 300 deg f (hard crack stage).
5. Remove from heat and add vanilla and butter.
6. Stir to mix well.
7. Pour onto greased baking pan. When cool, break into pieces.
8. Makes about 2 lbs. Of candy.
