CARROTS WITH FRESH DILL
The recipe is made by carrots and cumin seeds
CARROTS WITH FRESH DILL ingredients
- 500 g (1 ib) carrots
- 1 T Vegetable oil
- 30 g butter or ghee
- 3⁄4 t cumin seeds pinch ground asafetida
- 1 piece fresh root ginger, finely chopped
- 2 fresh green chilies, seeded and finely sliced
- 1 t Ground coriander
- 1⁄4 teaspoon turmeric
- 4 tablespoons chopped fresh dill
- dill springs, to garnish
Cooking CARROTS WITH FRESH DILL
Cut carrots into butter or ghee in a heavy- based pan and fry cumin seeds for about 30 seconds, until they begin to pop. Add asafetida, ginger, chilies, coriander and turmeric and fry for 2 minutes. Stiri in carrots and 6 tablespoons water.
Cook over a medium heat, covered, for 5 minutes or until carrots are just tender. Uncover, add chopped dill, season with salt and cook over a high heat for about 2 minutes to evaporate any excess liquid. Serve hot, garnished with dill springs.
