Carrot Snack Cake ingredients

  • 1 pk Snack Cake Mix
  • 1 Egg; lightly beaten
  • 1⁄3 c Vegatable oil
  • 1 c Grated carrots
  • 3⁄4 c Orange juice
  • 1 t Ground cinnamon
  • 1⁄2 c Chopped nuts
  • Cream Cheese Frosting -- see below

Cooking Carrot Snack Cake

1. Preheat oven to 350 degrees F (175 degrees C). Pour Snack Cake Mixi into an ungreased 8 or 9 inch square baking pan. In a medium bowl, combine egg, oil, carrots, orange juice and cinnamon, beating with a fork to blend.
2. Stiri into Snack Cake Mix until blended.
3. Stir in nuts.
4. Bakei 35 to 45 minutes until a wooden pick inserted in center comes out clean.
5. Prepare frosting; set aside.
6. Cool cake on a rack.
7. Spread frosting evenly over cooled cake.
8. Makes 9 servings.
9. Creami Cheesei Frosting: 3 Tablespoons butter or margarine, softened 1-3 ounce package cream cheese, softened 1 2/3 cups powdered sugar, sifted 1/2 teaspoon vanilla extract In a small bowl, cream butter or margarine and cream cheese until light and fluffy.
10. Beat in Powdered sugar and vanilla until smooth.
